Whats 4 Dinner

Steak Sandwiches:

This would be a good one to make for your Valentine!!

1 cup flat-leaf parsley
5 garlic cloves
1 jalapeno, seeded and roughly chopped
1/2 tsp crushed red pepper flakes
juice of two fresh limes
1/3 cup red wine vinegar
1 cup olive oil

Salt and Pepper to taste
1 small red onion
3 tomatoes, whatever type you like
2 pounds flank steak
sub-style sandwich roles
4 ounces of goats cheese, crumbled (don't let this scare you away!)

Fire up your BBQ!
Bring your piece of flank steak out of the refrigerator and season with Salt and Pepper (be generous).  Set aside....

In a food processor, pulse the parsley, garlic and jalapeno until everything is mixed up.  Add the red pepper flakes, lime juice, vinegar and olive oil.  YUMO.  Pour this mixture into a mixing bowl. 

Add the red onion and tomatoes to the olive oil mixture and set aside.

Place the flank steak on the hot grill seasoned side down.  Grill for 4-6 minutes / side depending on thickness.  Don't over cook the meat you will be sorry.

Remove the steak from the grill and place on a plate and promptly cover with foil for 10 minutes.  Don't touch it........

Place your opened sub roles on a baking sheet. 

After the 10 minutes has passed remove the steak from underneath the foil and slice in thin strips.  I hope that it is a bit bloody (that is a good sign that you didn't over cook it)

Now place the sliced steak meat on one half of the sub role and the olive oil/onion/tomoto mixture on the other half.  Crumble bits of goat's cheese over both halfs and place under the broiler until the cheese gets warm 2 minutes or so. 

Pull the sandwiches out before the bread burns, squish them together and enjoy!!

***I usually cook up some pasta noodles and use 1/2 of my olive oil mixture as dressing for the pasta and eat the pasta with the sandwich.  ****




Basia's Italian Meetballs:

>1 package of spaghetti noodles
>1 jar of your favorite spaghetti sauce

>1 lb ground turkey
>3 cloves of garlic, minced
>1 onion, chopped
>'blump' of butter
>'swirl' of olive oil

>1 egg
>1/4 cup bread crumbs
>3 TBSP ketsup
>1/4 cup parsley, chopped
>1/2 cup Parmesan, finely grated
>1/4 tsp fresh ground pepper


Start the water for your noodles!!
Preheat oven to 350

Saute onion and garlic in the butter and olive oil.  Remove from heat and set aside

Combine the ground turkey with the egg, bread crumbs, ketsup, parsley, Parmesan, salt and pepper.  Then add the sauteed onions and garlic.  Mix well.  Form into 2" turkey balls

Cover a jelly roll pan with wax paper.  Place turkey balls on the jelly roll pan.  Bake at 350 for 20 minutes.

Place the noodles in the boiling water when you have about 10 minutes left on the turkey balls.  Cook noodles according to package directions.

Warm your spaghetti sauce in a saucepan on low heat.

Serving:
Place a heaping pile of cooked noodles in the middle of  a plate.  Nest 4 meatballs right on top.  Pour a ladle full of sauce over the meatballs.  Garnish with parsley and freshly grated Parmesan.

Amy's Taco Soup:
> 1 lb ground beef or turkey
>1 packet taco seasoning
> 4-6 cans of beans, drained (black, pinto, kidney etc)
> 1 can cream corn
> 1 can regular corn
> 1 small jar of salsa
> 1 can tomato paste
> 1 can diced tomato

Brown the ground beef/turkey in a large sauce pan.
Add the taco Seasoning according to the package directions
Add the rest of the ingredients

Serve in large soup style bowls topped with chopped cilantro!!

Top with sour cream, cheese, avacado and/or frito chips
